I read a few cookbooks a couple of years ago about the difference in Mexican and tex-mex. It's funny how nachos are decidedly NOT Mexican, and although corn tortillas are, they are usually immersed in a red chili sauce which we don't do in Tex-Mex restaurants. I think the woman who has two different menus in her restaurant has the right idea.
I'd love to go eat at a Mexican restaurant rather than Tex-Mex, but I'd also like to still drink a Margarita with it. Smiley Course Dos Equis is fine too. Cheesy

The reason tex-mex is so popular is because it's what people like, fajitas were said to be created by "Mama Ninfa" and was extremely popular in houston a few years ago, now i think papasitos owns the title of most popular and their main draw is margaritas and fajitas. I live in houston where we have a huge mexican (south american) culture and there are hunfred if not thousands of authentic mexican food places mostly taquerias and you don't usually see a lot of americans there. I'll stick to fajitas i guess.

I really enjoyed Mexican breakfasts when I lived in Corpus. A soft tortilla with potatoes and cheese inside, maybe some chorizo...MMmmmMM! Can't get that at Mickey D's... Sad
