I read a few cookbooks a couple of years ago about the difference in Mexican and tex-mex. It's funny how nachos are decidedly NOT Mexican, and although corn tortillas are, they are usually immersed in a red chili sauce which we don't do in Tex-Mex restaurants. I think the woman who has two different menus in her restaurant has the right idea.
I'd love to go eat at a Mexican restaurant rather than Tex-Mex, but I'd also like to still drink a Margarita with it.

Course Dos Equis is fine too.
